Baked tofu, fresh bell peppers, and coriander are tossed with noodles and a zesty sesame dressing in this light and flavorful salad. It's ideal for a quick and simple lunch or dinner.

  • Cook Time: 15 minutes
  • Total Time: 30 minutes

Instructions

  • Preheat the oven to 200°C.
  • Toss the tofu in the cornstarch until evenly coated.
  • Drizzle vegetable oil over the tofu on a baking sheet.
  • Bake for 15 minutes, turning halfway.
  • In a small mixing bowl, combine the soy sauce, honey, and lime juice.
  • Toss the baked tofu, sliced bell peppers, and chopped coriander in a large mixing bowl.
  • To coat, drizzle with the soy sauce mixture.
  • In a separate small mixing bowl, combine sesame oil, rice vinegar, honey, soy sauce, garlic, and ginger.
  • Toss cooked noodles with the tofu mixture in a large mixing bowl.
  • Toss the noodle mixture with the sesame oil mixture to coat.
  • Refrigerate until ready to serve or serve immediately.
