Ingredients

• 2 tbsp olive oil
• 1/4 cup chopped fresh parsley
• 1 tablespoon vinegar (red wine)
• 1/4 cup chopped walnuts
• 4 medium beetroots, peeled and sliced
• 150g feta cheese, crumbled
• 1/4 cup chopped fresh mint

Time Needed

• Prep Time: 15 minutes
• Cook Time: 30 minutes
• Total Time: 45 minutes

Instructions

• Preheat the oven to 200°C2 Season the beetroot with salt and pepper3.
• Place the beets on a baking sheet and roast for 25-30 minutes, or until tender4 Whisk together the red wine vinegar and olive oil in a small bowl5 Combine the roasted beetroot, crumbled feta cheese, chopped parsley, chopped mint, and chopped walnuts in a large mixing bowl6.
