This Caprese Toast Salad with Tomato, Mozzarella, and Pesto is ideal for breakfast, brunch, or a light dinner. It's easy to make, but it's delicious and filling.

Ingredients

• pesto, 2 tbsp
• 4 slices of bread
• balsamic glaze, to drizzle
• To taste, season with salt and black pepper
• 1 cup of cherry tomatoes, halved
• Garnish with fresh basil leaves
• 1 cup of fresh mozzarella, sliced

Time Needed

• Prep Time: 10 minutes
• Cook Time: 15 minutes
• Total Time: 25 minutes

Instructions

• Preheat the oven to 375 degrees Fahrenheit.
• Toast the bread slices for 5-7 minutes, or until they are lightly golden brown, on a baking sheet.
• On each slice of toast, spread 1/2 tablespoon pesto.
• Toast should be topped with sliced mozzarella and cherry tomatoes.
• To taste, season with salt and black pepper.
• Bake for 5-7 minutes more, or until the cheese is melted and bubbly.
• Garnish with fresh basil leaves and drizzle with balsamic glaze.
